
Crispy on the outside and super gooey on the inside, these rice croquettes are perfect for using up leftover rice. Easy and quick to make, they are ideal for a tasty lunch or dinner.
Cook the rice or use leftover cooked rice.
Add two eggs to the rice, a drizzle of oil, salt, pepper, Parmesan, and mix everything together.
If the mixture is not firm, add more Parmesan and/or breadcrumbs as needed.
With lightly oiled hands, form a ball, fill it inside with ham and cheese, and close it carefully, shaping it into a croquette.
Quickly coat the croquettes in breadcrumbs.
Cook them directly in a pan with a drizzle of oil until golden on both sides.
Serve them hot and enjoy!
