
A quick and tasty pasta recipe with lemon pesto and smoked salmon. The lemon blended with nuts and Parmesan makes a creamy pesto that combines with the pan-sautéed salmon to season the pasta.
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
Prepare the sauce: slice the leek into rings and sauté it in a pan with a drizzle of oil; salt. After a few minutes, add the salmon cut into pieces and cook briefly.
Meanwhile, prepare the lemon pesto: blend the lemon juice and zest with the nuts, Parmesan, a drizzle of oil, salt and pepper until you get a smooth cream.
Drain the pasta al dente, reserving a few spoonfuls of cooking water; transfer it to the pan with the salmon and toss.
With the heat off, add the lemon pesto to the pasta and mix well; if needed, add a few teaspoons of cooking water to adjust the creaminess.
