Savor Tuscan Gnudi: delicious ricotta and spinach dumplings with a touch of nutmeg. A traditional Italian delight. Discover more!
Cook the spinach and squeeze it very well, then finely chop it and mix it with the ricotta, the egg, the Parmesan and season with salt and nutmeg. Flour your hands and make balls with the mixture, coating them in flour so they are not sticky. Bring the water to a boil in a large pot, salt it and add the gnudi.
They will take about 2 minutes to cook; anyway, when they float to the surface, they are ready! You can season them as you like, I ate them simply with oil and Parmesan, but they are also great with butter and sage
