Are you going to relatives' house and want to bring something special, very scenic but at the same time really simple? This log cake is the right dessert!
Whip the eggs for 3 minutes, then add the sugar little by little and continue beating for another 7 minutes (they should be nice and foamy and well whipped)
Add the sifted dry ingredients in two batches, stirring from the bottom up so the mixture does not deflate
Pour onto parchment paper and level it to obtain a 5 mm rectangle Bake at 190 degrees for 7/8 minutes, do the toothpick test, if it is dry it is ready
Using a cutting board, remove it immediately from the pan, gently peel off the parchment paper and place it back on top to retain moisture, roll it up and let it rest
Soak the sponge cake with plant milk and then spread half of the cream inside the log cake, roll it up and spread the other half on top.
Decorate with a fork to create stripes and then add berries and powdered sugar to decorate.
Store in the fridge for a maximum of 3/4 days
