  • Parmesan60
  • Eggs2
  • Milk (also plant-based)1
  • Speck or cold cuts of your choice100
  • Scamorza cheese150
  • Extra-virgin olive oilq.b.

    Cut the zucchini into fairly thin slices.

  2. STEP 2 OF 7

    In a bowl, add the zucchini, a pinch of salt, a drizzle of oil, the breadcrumbs, and the Parmesan, and mix everything together.

    Beat two eggs with a small cup of milk, add them to the zucchini, and mix well.

  4. STEP 4 OF 7

    On the bottom of a baking dish, add a drizzle of oil and a sprinkle of breadcrumbs, then pour in half of the mixture.

    Add the filling of your choice, cover with the other half of the mixture, helping yourself with a spatula to level it evenly.

  6. STEP 6 OF 7

    Add a drizzle of oil on top and, if desired, another sprinkle of breadcrumbs.

    Bake at 200 degrees for 20-25 minutes, until golden brown.
