Peel the potatoes and cut them into many thin slices using a mandoline slicer.
Line a baking tray with parchment paper, add the grated provola, and arrange all the potato slices, slightly overlapping them to form a rectangle.
Brush the surface with a little oil and bake at 200 degrees for 20-25 minutes.
Remove from the oven and add the spreadable fresh cheese, cooked ham, and the remaining provola.
If desired, bake again for just 4-5 minutes to melt the provola inside.
Cut into slices and enjoy!
