Simple and quick summer skewers made with lemon-marinated shrimp and lightly grilled sweet peaches. The aroma of citrus, the spicy paprika, and the contrast between seafood and fruit make this appetizer original and irresistible, perfect for an informal dinner or an aperitif.
Carefully pat the shrimp tails dry with paper towels to remove excess moisture.
In a bowl, mix the oil, grated zest and lemon juice, paprika, parsley, pepper, and garlic. Add the shrimp and let them marinate for 15–20 minutes.
Remove the garlic from the marinade. Wash the peaches, halve them, remove the pits, and cut them into even wedges.
Make the skewers by alternating the marinated shrimp tails with the peach wedges, without pressing the ingredients together too tightly.
Heat a griddle or nonstick pan very well. Salt the skewers shortly before cooking.
Cook the skewers for 2–3 minutes per side, until the shrimp are opaque and the peaches are lightly browned. Serve immediately.

Store cooked skewers in the refrigerator in an airtight container for up to 1 day. Preferably consume them immediately after preparation.
To prevent wooden skewers from burning, soak them in water for at least 20 minutes before using them.
