Preparation

    If we choose to make homemade buns, let's start with these. In a stand mixer, mix the flour with the crumbled yeast, sugar and the previously boiled potatoes.

    Add the milk in a stream and mix for about 3-4 minutes. Add the egg yolk and, when the dough becomes elastic, add the salt and finally the butter cubes, one at a time.

    Once you have a smooth dough, let it rise for about two hours.

    Form four buns of about 130 g each and let them rise on a baking tray lined with parchment paper for half an hour.

    Brush the surface with milk or egg and add seeds on top to taste.

    Bake at 180°C for about 10-12 minutes. Once cooked, brush them with water to make them even softer

    Meanwhile prepare the sauce by mixing the ketchup with mayonnaise, mustard, vinegar, garlic powder and the finely chopped gherkins and set aside.

    Season the meat with salt and pepper and form patties of about 100 g each.

    Meanwhile cook the bacon in a non-stick pan and when it becomes nice and crispy set it aside.

    In the same pan where we cooked the bacon, place our patties (2 per person, 100 g each) and flatten them with a meat press.

    Cook the burgers on both sides, add our cheese on top and wait for it to melt.

    Assemble our burger by cutting the bread in half, then arrange, in order, the bacon slices, the burgers and the sauce.
