These savory truffles would be perfect for your Christmas aperitif! They are colorful, fun and delicious. They are also no-cook. They can also be prepared the day before... because the longer they stay in the fridge, the firmer and tastier they become.

  • Ricotta100

  • Pistachio crumbs30
  • Lemon zest1
  • Smoked salmon mousse50

Preparation

  1. STEP 1 OF 5

    I cooked the peas in a pan with a drizzle of oil and a pinch of salt. Then I transferred them to a bowl and roughly mashed them with a fork.

  2. STEP 2 OF 5

    I added the ricotta and gave it a first mix. I seasoned with salt, pepper and lemon zest. Finally, I added the chopped smoked salmon.

  3. STEP 3 OF 5

    I mixed the mixture well and put it in the fridge for about 15 minutes. After this time, I started forming meatballs with my hands.

  4. STEP 4 OF 5

    I rolled my meatballs in the pistachio crumbs and that’s it. Just arrange them on a serving plate and serve.

  5. STEP 5 OF 5

    It is recommended to serve them after putting them in the fridge for at least a couple of hours.

In this version, the saltiness comes from the smoked salmon... but for a vegetarian alternative you can replace it with chopped sun-dried tomatoes.
