Light and gluten-free apple cake: a light, healthy and delicious dessert, lactose-free and butter-free, to be prepared using rice flour, rice milk and good extra virgin olive oil!
Step 1 of 7: Wash the apples thoroughly, peel them and cut them into chunks. Put the pieces in a bowl and sprinkle with a little lemon juice to prevent them from oxidizing.
Step 2 of 7: In a large bowl, crack the eggs and add the brown sugar. Use a whisk to beat everything until light and frothy.
Step 3 of 7: Add the extra virgin olive oil and water to the egg and sugar mixture. Mix well to combine the ingredients.
Step 4 of 7: Sift the rice flour and cream of tartar baking powder, then gradually add them to the mixture, continuing to stir. Add the pinch of salt.
Step 5 of 7: Fold the apple chunks into the mixture, gently mixing with a spatula to distribute them evenly.
Step 6 of 7: Line the baking pan with parchment paper and pour in the batter, smoothing it with a spatula.
