A light cake made with carrots, oat flakes and Greek yogurt, without sugar, cooked in the air fryer. Ideal for breakfast or a snack, customizable with dried fruit, cocoa or alternatives for intolerances.
Step 1 of 3: Blend the ingredients: combine blended carrots, oat flakes, egg whites, Greek yogurt, coconut flour, cinnamon and baking powder and blend until you obtain a smooth batter. If you prefer a more rustic texture, blend the oat flakes less.
Step 2 of 3: Transfer the batter into an air-fryer-safe baking pan (preferably silicone). Set the air fryer to 160°C and cook for about 20-30 minutes; check doneness with a toothpick: if it comes out clean, the cake is ready.
Step 3 of 3: Let it cool for a few minutes before unmolding. Serve warm or cold, optionally with a spoonful of Greek yogurt or a dusting of cinnamon.
