A single-serving cake made with pear, cocoa, and chufa flour: a healthy, naturally sweet dessert with no added sugar and lactose-free. Ready in the air fryer in less than 30 minutes, soft and fragrant, perfect for breakfast or a snack.
Peel the pear and cut it into pieces.
Put the pear pieces in the blender together with the egg, chufa flour, unsweetened cocoa, and water (or the plant-based drink of your choice).
Blend until you get a smooth, homogeneous mixture with the consistency of a thick batter.
Pour the mixture into a mold suitable for the air fryer (preferably silicone or ceramic).
Cook in the air fryer at 170°C for about 20 minutes: the little cake should be cooked through but still soft in the center. Check during the last few minutes and adjust the timing to your air fryer.
Let it cool slightly before unmolding and serving.

Variations: add cinnamon or vanilla, chopped hazelnuts, replace part of the water with plant-based drink (almond or coconut), or use apple instead of pear. For conventional oven baking: 180°C for 25–30 minutes (toothpick test). Chufa flour can be replaced with almond or oat flour (the flavor and texture will change).
