A moist and indulgent cake from the Piedmontese tradition, prepared without flour with ripe pears, unsweetened cocoa and amaretti. It is even more intense and soft the following day; for a gluten-free version, use certified gluten-free amaretti.
Step 1 of 6: Peel the pears, remove the cores and cut them into pieces. Transfer them to a pan with the butter and sugar, then cook them until soft. Add the liqueur, let the alcohol evaporate and leave to cool slightly.
Step 2 of 6: Coarsely mash the pears with a fork, without completely turning them into a purée, so that some pieces remain in the mixture.
Step 3 of 6: Finely crumble the amaretti and mix them with the unsweetened cocoa and salt.
Step 4 of 6: Add the egg to the lukewarm pears, mix and incorporate the mixture into the cocoa and amaretti blend until you obtain a smooth batter.
Step 5 of 6: Butter a 20 cm round cake pan and dust it with cocoa. Pour in the batter, level the surface and bake in a preheated static oven at 180 °C for approximately 30 minutes.
Step 6 of 6: Remove from the oven when the cake has slightly pulled away from the edges, while the center is still moist. Let it cool completely and finish with a dusting of powdered sugar.
