Light, lactose-free bruschetta made with spelt crackers, marinated anchovies and sautéed vegetables. Ideal as an appetizer or light dish, suitable for those intolerant to eggs and lactose.
Wash and dry the mixed vegetables well.
Cut the vegetables into pieces or thin strips according to preference.
Heat a tablespoon of extra virgin olive oil in a pan.
Sauté the vegetables over medium-high heat for about 5-7 minutes, until tender while still slightly crisp.
Add a pinch of salt and a sprinkle of oregano, mix and remove the vegetables from the pan.
Arrange the spelt crackers on a serving plate and top with the sautéed vegetables.
Gently place the marinated anchovies over the vegetables and finish with more oregano if desired.
