Ingredients

No. of servings
  • Ingredients for the dough
  • Type 1 flour500
  • Lukewarm water350
  • Fresh brewer's yeast10
  • Extra virgin olive oil35
  • Fine salt15
  • Rosemary (fresh)q.b.
  • Turmeric powder (3-4 teaspoons)q.b.
  • Ingredients for the brine
  • Extra virgin olive oil30
  • Room-temperature water for the brine30
  • Fine salt for the brine (1 teaspoon)q.b.
  1. STEP 1 OF 9

In a bowl, mix the flour with the turmeric.

  2. STEP 2 OF 9

Make a well in the center and pour in 320 g of water in which you have dissolved the yeast; give it an initial mix and incorporate the oil.

  3. STEP 3 OF 9

Continue kneading and pour in the remaining 30 g of water; finally add the salt. The dough will be very sticky.

  4. STEP 4 OF 9

Cover the dough and let it rise for about 3 hours, folding it over itself every hour.

  5. STEP 5 OF 9

After the rise, transfer the dough to a baking tray lined with parchment paper and greased with oil; dampen your hands and spread the dough out.

  6. STEP 6 OF 9

Prepare the brine by mixing oil, water, and salt.

  7. STEP 7 OF 9

Pour the brine over the focaccia and, using your fingertips, make dimples in the dough so the brine can soak in; add plenty of rosemary.

  8. STEP 8 OF 9

Bake at 200°C for 25 minutes. During the last 3-4 minutes, move the tray toward the bottom for a crisper crust and finish with 1 minute under the grill if needed, checking the baking.

  9. STEP 9 OF 9

Cut the focaccia while warm and serve; it is also excellent filled.
