An unusual and delicate pesto, ideal for seasoning pasta, bruschetta or as a side dish.
Peel the kiwi and blend it with 2 handfuls of arugula to taste, the Parmesan, a pinch of coarse salt, pepper, the juice of half a lemon and the oil a little at a time.
Obtain a smooth cream.
Naturally, depending on the desired consistency, you can add more arugula or kiwi.
Consume fresh or store in the fridge in an airtight container
The pesto is ideal for seasoning pasta, but it is also excellent on bruschetta or as an accompaniment to a side dish.
