Carrettiera-style eggs are a simple and tasty recipe, perfect to serve with slices of fresh or toasted bread for dipping. The combination of toasted bread seasoned with garlic, chili pepper and pecorino makes this dish a real treat.
Toast the coarsely chopped bread or breadcrumbs in a non-stick frying pan over high heat, moving it constantly until golden without burning.
Transfer the toasted bread to a bowl and immediately season it with a drizzle of extra virgin olive oil, garlic powder, chili pepper to taste and grated pecorino.
Let the seasoned bread cool and add more grated pecorino if desired.
Meanwhile, cook the eggs sunny-side up in a pan with a drizzle of oil.
When the eggs are almost cooked, sprinkle the seasoned bread over the eggs, cover with a lid and continue cooking for about a minute.
Salt, add a sprinkle of parsley and serve immediately with slices of toasted bread.
