Mix the 00 flour, rice flour and all the water.
Once all the flour has been absorbed, knead quickly, cover with cling film and set aside.
Cook the vegetables in a pan for about 5-7 minutes; they should remain crisp (cook the broccoli in advance by steaming it).
Add the mix of soy sauce, ginger, garlic and sesame seeds to the vegetables and mix everything together.
Take the dough again, shape it into a log and cut into small pieces.
Gently press with your finger, flattening them so they take on the classic shape.
Cook in salted boiling water for 6-7 minutes (depending on thickness).
Drain directly into the pan and combine.
Plate and add some fresh spring onion or more sesame seeds.
