My grandmother's cake, also called Graziella Cake, is a soft and fragrant cake made with gluten-free and dairy-free ingredients, perfect for an inclusive Christmas. The original recipe called for flour, milk and butter, but this version is suitable for those with intolerances or special dietary preferences.
Preheat the oven to 180°C in static mode.
In a bowl, crack the eggs, add the sugar and whip with an electric mixer for a few minutes until you get a fluffy mixture.
Add the oil, plant-based milk and vanilla paste, then mix with the mixer.
Add the sifted gluten-free mix and baking powder, mixing with the mixer until you get a smooth, lump-free batter.
Grease the cake tin and dust it with gluten-free breadcrumbs.
Pour the batter into the cake tin, tapping it lightly to release the air bubbles.
Bake for about 25-30 minutes or until golden and dry in the center when tested with a skewer.
