Rustic-shaped large apple cookies, crisp on the outside and soft on the inside, enriched with plenty of fruit cubes. They are prepared without molds, a rolling pin, or refrigeration, and are baked immediately after shaping.
Step 1 of 10: Peel the apples, remove the cores, and cut them into approximately 1 cm cubes.
Step 2 of 10: Work the flour, potato starch, and cold butter cut into cubes with your fingertips until you obtain a sandy mixture.
Step 3 of 10: Add the sugar, baking powder, vanilla, lemon zest, and salt, then mix the dry ingredients.
Step 4 of 10: Add the egg and egg yolk and work the mixture briefly until you obtain a compact dough, without overheating it.
Step 5 of 10: Gently incorporate the apple cubes into the dough, distributing them evenly.
Step 6 of 10: Transfer the dough to a lightly floured work surface, compact it, and divide it into five portions using a pastry scraper.
