Homestyle comfort food: creamy pasta and potatoes, rich and flavorful, prepared in a pan by cooking the potatoes and then the pasta directly with them until creamy.
Step 1 of 6: Pour a generous drizzle of extra virgin olive oil into a pan and add the finely chopped onion.
Step 2 of 6: Add the potatoes cut into cubes, the double concentrated tomato paste, salt and oregano, and sauté for a few minutes.
Step 3 of 6: Pour in hot water to cover the potatoes, cover with a lid and let boil for about 10-15 minutes, until the potatoes are soft and start to break apart when pressed with a spoon.
Step 4 of 6: Add the mixed pasta and cook it directly together with the potatoes, stirring often and mashing the potatoes to create a creamy sauce.
Step 5 of 6: When the pasta is cooked, add the grated Parmesan, toss well and let rest for a few minutes.
Step 6 of 6: Plate and finish with oregano and a drizzle of extra virgin olive oil raw.
