
... it happened again. I boiled a whole cauliflower and since I'm the only one who eats it in my house, almost all of it was left over. I don't feel like eating it simply boiled again, so? Let's make some tasty croquettes.
Just mash the cauliflower with a fork, add the flour, salt, spices and a generous drizzle of oil. Knead and finally incorporate the grated provolone.
Knead well with your hands until you get a soft mixture that is workable with your hands.
At this point shape the croquettes. I coated them in breadcrumbs and baked them in the oven at 200 degrees until golden.

They can be frozen and then baked in the oven when needed.
They can also be made with other boiled vegetables. The important thing is that they are chopped up well.
