A quick mug cake cooked in the microwave, ideal for a fast snack. Basic version made with egg whites (or whole egg) and the option to replace sugar and milk with vegan/zero alternatives. Very simple preparation and microwave cooking in just a few minutes.
Step 1 of 6: In a large mug, combine the egg whites (or the whole egg) with the sugar and whisk lightly.
Step 2 of 6: Add the flour, baking powder, and vanilla extract (if used) and mix until smooth.
Step 3 of 6: Stir in the oil and milk (or plant-based drink) and mix well until combined.
Step 4 of 6: Place the mug in the microwave. Cook on high power for 1 minute and 30 seconds.
Step 5 of 6: Open the microwave door for a few seconds to let the heat settle, then put the mug back and continue cooking for another 1 minute and 30 seconds or until the mug cake is cooked through.
Step 6 of 6: Let it cool for a few minutes before eating.
