Combine the rolled oats, mixed seeds, water, extra virgin olive oil and a pinch of salt in a bowl.
Mix well until you obtain a smooth, compact mixture, then let it rest for 15 minutes.
Roll out the dough between two sheets of parchment paper with the help of a rolling pin until it reaches a thin, even thickness.
Cut the crackers into the shape you prefer, then transfer them to a baking tray lined with parchment paper.
Bake in a preheated oven at 180 °C for 15–20 minutes, until slightly golden.
Allow them to cool completely before removing and serving them, so they become crispier.

Store the completely cooled crackers in an airtight container at room temperature for 3–4 days. To keep them crispier, avoid humidity and heat sources; alternatively, they can be frozen once cooked and well sealed.
